Curry Chicken


Curry Chicken is uniquely Caribbean especially in islands of Jamaica and Trinidad. This delicious and spicy way of cooking chicken is made popular by using the vibrant spices of curry powder. A typical curry chicken recipe consists of chicken, onion, ginger, garlic, hot scotch bonnet pepper, thyme and scallion and curry powder. Discover a delicious and easy to prepare curry chicken by trying this mouth-watering recipe.
If you do not have the following ingredients at home you will need to buy them:
2 lbs chicken, chopped into nice bite pieces
4 tablespoons vegetable oil
1 medium onion, two stalk scallion chopped
6 seed of pimento
Two cloves of crushed garlic
A dash of fresh ginger
1 small ripe scotch bonnet pepper and minced
½ stick of cooking butter (optional)
2 tablespoons of real Caribbean curry powder
2 medium Irish potatoes, chopped
Salt and black pepper to taste
½ cup of Chicken Stock for more flavor

In a large basin, wash and clean chicken with vinegar or lime juice. Allow to drain them combine all the above ingredients, except for the oil, butter and chicken stock. Put aside to allow the chicken to marinade for about an hour. When this is done, heat the oil in a medium-size saucepot at a medium heat. Scrape off the seasoning from the chicken and place each piece in the pot carefully. Cover the pot to allow the juices from the chicken to slowly cook the meat.

You may add a little water if the curry gravy seem to be drying out. This curry recipe should be ready in about 45-minutes or until the chicken is tender. Add the balance of remain seasoning with butter, Irish potatoes and chicken stock and allow it to simmering for about 5-minutes. Taste the gravy to see if it is perfect and don’t need any salt, if so add a pinch. When your curry chicken is done, you can serve it with plain white rice and fresh leafy vegetable.
